Stir-Fried Zucchini with Tofu and Carrots

Now that I’m cooking everyday, I run out of ideas after cooking the same old dishes again and again.

I’ve decided to check out the various photos I’ve taken of any delicious food I’ve eaten at cafes, canteens and restaurants.

Here’s a sample dish from the school canteen. I love this dish, which is stir-fried zucchini with tofu skins (?), sliced carrots and a bit of chopped celery thrown in:

Doesn’t it look good? I love the zucchini (or Japanese cucumber) in China because it’s really juicy!

I’ve tried the zucchini back home but I’ve found that it’s too crunchy, dry and hard. Got to shop around a bit and pray that not all zucchini is like that.
