Pumpkin, celery, chicken and wolfberry soup

As the weather’s still cool and we’re in undershirts, sweaters and socks, I’ve been cooking soups almost every day. Here’s one I’d “created” by dumping what’s left in the fridge into the slow cooker. I swear the slow cooker’s “a magic pot” because ANYTHING you cook in it turns out delicious!

One of my family’s favourite soups, this delicious, naturally-sweet and nourishing soup can also be boiled with chicken. It combines the energy-giving red dates (Cantonese=hung tsao) and boxthorn fruit / lycium fruit / medlar (Cantonese=kei chi). Kei chi is also known to provide relief to tired eyes.
